The American Culinary Federation, the largest organization of professional chefs in the U.S., will lead the World Association of Cooks Societies (WACS) for the next four years. WACS, a "United Nations" of cooking, is the world organization comprising the leading professional-cooking organizations of nations worldwide. ACF will take the lead role in WACS. According to Yahoo news ACF will "strive to expand the horizons of WACS -- representing more than 8 million cooks worldwide -- so that the organization may foster culinary education and certification the world over. The latter function will be based on U.S. standards and criteria."
This is good news for aspiring and current chefs looking to gain international experience. A U.S. culinary education may be even more valuable in the near term as U.S. standards of best practices become more common and U.S. culinary certification more relevant.
